Southwest Chicken Salad
1 1/2 lbs. boneless, skinless chicken breast halves 1 pkg. (1.25 oz) taco seasoning 1/4 c. oil
1/4 c. water 1/4 c. lemon juice 8 c. torn lettuce
Topping recommendations: Salsa, sour cream, shredded cheddar cheese, black olives
1. In glass dish or plastic bag, combine taco
seasoning with oil, water and lemon juice. Add chicken breasts, turning to coat all sides. Marinate 20 minutes. 2. Broil or grill 7-10 minutes per side or until done.
3. Cut chicken into thin slices. Divide lettuce evenly among four large salad plates. 4. Top each serving with 1/2 chicken breast, sliced, and garnished with choice of toppings.
Serve with warm bread sticks.
